Chickpea Coconut Curry

This Chickpea curry is such a hearty and flavorful Indian dish that really packs in that crave-able flavor! It's made without any meat and you won't even miss it in the slightest!

The best part, in my opinion, really is the sauce with it's vibrant taste and perfect smoothness (no chunks thanks to a quick blend).

Though it may seem like an incredibly long list of ingredients here, don't be alarmed because the majority of it is spices you likely already have on hand (plus I've even included a few as optional).

Some of you may be thinking, but wait, there's no curry? Here we make our own curry spice blend which gives us far more overall control in flavor and heat level.

And this recipe uses plenty of them for an exciting, rich depth of well rounded flavor.

Serving suggestions are of course the classic basmati rice or cauliflower rice, but if you really want to go all out serve with warm buttery naan bread. Roasted vegetables are a great side to it as well just ditch the Italian seasoning and use spices like those here instead.

Quinoa Salad with Fresh Mediterranean Flavors

Healthy recipes don't need to be boring. In fact healthy recipes like this are actually some of my favorite. You just feel good after you eat them and when there's this much flavor you'll start to crave healthy dishes.

The inspiration for this recipe came from a local restaurant we dined at. Out of everything we ordered this was easily my favorite, I couldn't stop thinking about how good it was so I knew I had to make it at home.

Their version had ground lamb but I prefer chicken so I went with that instead but feel free to try it with cooked ground lamb if you'd like.

This soup is brimming with nutritious ingredients and finished with a bit of cream to make it rich and take it over the top. But if you are wanting to keep it healthy go with coconut milk or even half and half.

We often get in the rut of making the same easy things but I love recipes like this that have so much flavor and are something out of the norm. This is a soup that's sure to impress!

How to Make Chicken Tagine

Generaly chicken tagine is cooked low and slow in a tagine (a clay, ceramic, or cast iron cone shape vessel) over the stovetop or in an oven. Here I opted for a slow cooker because I imagine it cooks similarly and how many of us own a tagine? A pot on the stovetop would work as well but I love the simplicity of the slow cooker.

So to start you simply saute an onion and carrot in a skillet until tender. Then you add in garlic and plenty of those Moroccan spices and saute those just shortly.

Following that you'll pour in some tomatoes and chicken broth, then pour that whole mixture into the slow cooker along with chicken and chick peas. Then cover and let the slow cooker work it's magic. And last you finish the dish with fresh lemon and herbs.

  • Veggies including sweet potatoes, red onion, kale
  • Chick peas
  • Olive oil
  • Seasonings including cumin, paprika, cinnamon, turmeric, salt
  • Red onion
  • Quinoa

For the Ginger Tahini Sauce

  • Tahini
  • Lemon
  • Honey
  • Garlic
  • Ginger

Tahini can be somewhat strong (and it can vary by brand), so if desired use half cashew butter.

The Perfect Carrot Salad

You guys I just got thee best compliment today - my daughter claimed this Moroccan Carrot Chick Pea Salad to be better than butter noodles! Hahaha.

Coming from her though, buttered spaghetti noodles with salt are her favorite food so I was pretty excited to hear it! Especially since this is much healthier.

I'd have to say though that this is one of my favorite salad recipes too! Most definitely not your typical green salad but such a flavorful, well blended salad.

If you haven't had Moroccan food all these spices and ingredients together would seem really strange but let me tell you they are oh sooo good together!

My Favorite Couscous Recipe!

There aren't many recipes I post I tell you that you have to try but please let this be one of them! I'm head over heels in love with this delicious Moroccan Couscous with Roasted Vegetables, Chick Peas, and Almonds!

I love the blend of moroccan flavors here and I also really love all the texture going on (think itty bitty couscous, soft roasted veggies, crunchy almonds, chewy raisins and tender chick peas).

And in case you missed it I recently shared a Moroccan Grilled Chicken recipe that pairs perfectly with this couscous and completes the meal. It's a meal I'm excited to make again and again and again!!

So What's In This Couscous?

  • fresh veggies - bell peppers, carrots, onion, zucchini and garlic
  • fresh cilantro and mint
  • lemon
  • spices - turmeric, cumin, cinnamon and coriander
  • olive oil
  • low-sodium chicken broth
  • chickpeas
  • almonds
  • raisins
  • couscous

How can this amazing salad not taste good with flavors like that? You can also easily adapt this couscous with your favorite veggies it's great for using up what you have in you kitchen.

How to Make This Tasty Couscous

  • Preheat oven to 475 degrees. Grease baking sheet
  • Add veggies, drizzle with oil and season.
  • Roast until tender, about 15 minutes.
  • Whisk olive oil, lemon, garlic and most spices.
  • Bring chicken broth and turmeric to a boil.
  • Pour hot chicken broth over couscous and raisins in bowl and toss
  • Cover and rest 5 minutes.
  • Add roasted vegetables, chick peas, almonds, cilantro, mint and lemon mixture and toss.

It Makes Great Leftovers!

Normally I'm not one that get's super excited about leftovers but I was so happy that there was some of this left after dinner because I ate it for lunch for the next two days and enjoyed it down to the last bite!

Moroccan Couscous with Roasted Vegetables, Chick Peas and Almonds

My favorite couscous recipe! It's brimming with bright Moroccon flavors and packed with fresh veggies. You even get some protein from the almonds and chick peas. It's a great lunch on it's own or for dinner pair it with chicken, lamb or beef. It makes great leftovers too!

  • 1 large red bell pepper, (cored and diced)
  • 2 medium carrots, (halved through length and sliced fairly thin)
  • 1 small red onion, (diced into 1-inch chunks)
  • 1 medium zucchini, (halved through the length and sliced)
  • 4 Tbsp olive oil, (divided)
  • 2 Tbsp fresh lemon juice
  • 2 tsp minced garlic ((2 cloves))
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • Salt
  • 1 1/3 cups dry couscous
  • 1 (14.5 oz) can low-sodium chicken broth
  • 1/2 tsp turmeric
  • 1/2 cup raisins
  • 1 (14 oz) can chick peas, (drained and rinsed)
  • 1/2 cup slivered almonds, (toasted)
  • 3 Tbsp minced fresh cilantro
  • 2 Tbsp minced fresh mint
  1. Preheat oven to 475 degrees. Spray a 18 by 13-inch rimmed baking sheet with non-stick cooking spray. Place bell pepper, carrots, onions and zucchini on baking sheet.
  2. Drizzle with 1 Tbsp olive oil and season with salt and toss to evenly coat. Roast in preheated oven about 15 minutes until tender, tossing once halfway through roasting.
  3. Then if desired move oven rack closer to broiler and broil for about 1 - 2 minutes to add a light char.
  4. While vegetables are roasting, in a small mixing bowl whisk together remaining 3 Tbsp olive oil, lemon juice, garlic, cumin, coriander, cinnamon and season with 1/4 tsp salt, set aside.
  5. Bring chicken broth, 1/2 tsp salt and turmeric to a boil. Place couscous and raisins in a large mixing bowl, pour hot chicken broth over couscous and stir, cover bowl with plastic wrap and let rest for 5 minutes.
  6. Add roasted vegetables, chick peas, almonds, cilantro, mint and lemon mixture to couscous and toss to evenly coat (while seasoning with a little more salt to taste as desired). Serve warm.

I've always loved tuna salad sandwiches since my mom made them for me when I was little. Here I've made a more flavorful and exciting twist on tuna salad with the addition of herbs, Greek yogurt, plenty of lemon juice and red onions.

Another thing I chose to do in this recipe is add chickpeas not only to make it more filling but to add more nutritional value and I served it in pita pockets because pita pockets and tuna salad just go together.

I absolutely love chickpeas because I am a huge hummus fan and what's a good, traditional mediterranean hummus without chickpeas? I've been eating hummus on a daily basis with my lunch lately. It's the best way to get my kids (and myself even) to eat a lot of veggies in one sitting.
