What are Cowboy Cookies?

We are all familiar with the classic chocolate chip cookies, peanut butter cookies, sugar cookies and snickerdoodles but what exactly are cowboy cookies?

They are a cookie similar to oatmeal cookies as they include oats but what makes them unique is that they also include additions of shredded coconut, chocolate chips, pecans and cinnamon.

Some say they were created and attained their name in being a a good pack along cookie that held up well in a saddlebag, while others believe they originated in Texas and are named after the cowboys.

People of all ages love these cookies and they are a welcome change from the traditional cookies with one main flavor. These are tempting blend of so many cookies in one!

What's not to love about these highly textural cookies? It's a decadent cookie brimming to the max with all the best things!

A Quick and Easy Granola Recipe!

Sometimes I just don't have the patience for how long a lengthy-cook time granola traditionally takes in the oven. And so I set out to test granola over the stovetop to see if I could get a similar result in a fraction of the time.

And believe it or not it works! It's sweet, nutty, crisp, toasty, made with nutritious ingredients, and deliciously fresh. In other words much better than what you buy in a box or bag.

Plus it makes a smaller batch because you may not always need a big batch of granola.

There are endless ways to use it, or you can simply snack on it plain because it's completely irresistible!

Ways to Use This Homemade Granola

  • Add to yogurt or finish it over berry parfaits.
  • Toss into a berry salad instead of croutons (love this one!).
  • Bake some diced, lightly sweetened fruit and use this for a finish.
  • Add to grilled fruit, such as peaches with mascarpone.
  • Sprinkle over ice cream, a banana split, or pudding.
  • Dip fruit into a fruit dip or caramel dip then dunk in the granola.

Island Style Coconut Shrimp!

This classic coconut shrimp tastes equally as good as the coconut shrimp you'll get in Hawaii! We found ourselves going back to the same restaurant 3 times to order it so I had to figure out how to make it at home.

The shrimp itself calls for a few basic dredging ingredients then of course a generous amount of shredded coconut, and some panko for crunch.

And it's taken up a notch with a sweet, salty and tangy mango dipping sauce. It really is the ultimate sauce to serve with this shrimp!

When you pair the two together people will love them so much they'll quickly disappear before your eyes.

No one can resist the tempting flavor and the perfect layering of textures. You get tender shrimp surrounded by a crispy light crunch, and it's finished with a seriously smooth sauce for dipping.

Though it boasts of a cheery summertime vibe this is easily something you'll crave year round!

What is a Nanaimo Bar?

Some of you are likely asking, what are Nanaimo Bars? They are a popular Canadian confection, basically a layered bar cookie, that to me tastes very similar to a richly chocolaty, loaded fudge. They are named after the west coast city of Nanaimo, British Columbia.

They consist of 3 layers, a cracker crumb and chocolate base, a custard flavored icing and then they're finished with a chocolate coating.

The instructions for these treats may appear to be long and tedious but these tasty treats are surprisingly super simple to make. They are a no-bake bar, after all.

After one taste you'll be wondering where these delicacies have been your whole life!

What do they taste like?

To me they are reminiscent of fudge, or an Almond Joy - but much better of course. It's something about the chocolate, almond coconut combo. A great combination!

My Favorite Alfajores Recipe

I first discovered these gourmet cookies thanks to my Husband. He lived in Argentina for a few years and they were one of his favorite treats there so of course I had to learn how to make them.

I can't understand why these delicious dulce de leche filled, shortbread-like cookies aren't super popular here in the United States. These cookies melt in your mouth!

Surprisingly enough I like these cookies best the second day. Just after adding the dulce de leche to cookies are still nice and crisp but after resting the moisture of the dulce de leche soaks into the cookies and makes them deliciously tender. Which would you prefer crisp or soft and tender?

Homemade Hummingbird Cake

I think of this cake as banana cake meets the tropics, in that it is loaded with bananas, laced with fresh pineapple and covered in sweet, toasted coconut.

It will remind you a lot of banana bread, but with a bonus of decadent cream cheese frosting of course. There are so many delicious flavors and perfect textures in this cake.

The cake has a nice tender thanks to the sugar and bananas and it has a nice moist crumb thanks to the vegetable oil, it's dotted with juicy bits of pineapple and crunchy toasted pecans, and it's finished with a creamy, lightly tangy frosting and finished with crisp bits of toasted coconut (or chewy coconut if you like it un-toasted).

It's an old fashioned style cake that will likely remind you of home. Made from scratch and sure to please!
