Fluffy Homemade Marshmallows

Making marshmallows from scratch is actually much easier than you may think, with a rather simple and straightforward method. It just requires a few handy kitchen tools to make them right (such as a candy thermometer and a high speed stand mixer).

They truly are the best marshmallows you’ll ever eat (we've already made 5 batches for the holidays)! And they don’t require any fancy ingredients just some candy staples.

For a streamlined process just be sure to have everything measured and tools ready before you begin to make things easier (such as lining and greasing the pan because this sticky mixture likes to begin to set quickly). Also read over the entire recipe before you start (as should be done with any recipe).

These also make for a delicious Christmas gift, paired with a jar of this homemade hot chocolate mix of course! The two combined makes the tastiest cup of hot cocoa ever!

What's an Icebox Cake?

It is a type of no-bake "cake" that is generally layered with crackers, wafers or cookies which alternates with a cream filling. They can also include fruits, nuts and other mix-ins and they come in various flavors such as chocolate or strawberry.

After assembly, the icebox cake is set in the fridge to rest while the cracker layer absorbs some of the moisture from the cream filling and softens and becomes cake-like.

Since the cake is served cold it's a great dessert for hot summer days.

This icebox cake, which is made with fresh raspberries, is my favorite version. It's adapted from my fluffy Raspberry Cheesecake Mousse, but instead of individual cups it's layered into a pretty cake-like form.

In this recipe, you can appreciate that we ditch any cool whip or pudding mix (often found in icebox cakes) and make the filling and topping from scratch. Trust me it's a thousand times better!

This dessert is decadent, fruity, fluffy, creamy, fresh, flavorful, lightly tangy, perfectly sweet, and just beyond tasty!

It's the dessert that's worth every bit of effort and it will earn high praise at the dinner table.

All About Panna Cotta

What is panna cotta anyway?

Panna Cotta is a popular chilled Italian dessert made of cream (and often milk) that is sweetened with sugar, flavored with vanilla and uses gelatin to thicken and hold its form.

Panna cotta in Italian translates to "cooked cream."

This dessert can be served straight from the cups it's chilled in or unmolded and inverted into dessert plates.

To me it is something reminiscent of ice cream and jello. Though it's the best upgrade you could ever imagine to traditional jello because cream makes everything better.

Plus this has a more welcome, more melt-in-your-mouth-like texture than jello does.

Panna Cotta can also be made with other flavor variations as well. Other popular flavors include chocolate panna cotta, mango, coconut, coffee and lemon.

This is a must try treat that's perfectly refreshing on a hot summers eve. And of course it's a dessert people of all ages will love!

Mint Chip Cheesecake Mousse

Can you tell? I kind of have a thing for cheesecake mousse/no bake cheesecakes/anything remotely related to cheesecake. It's true, I'm totally obsessed!
I love the mint chocolate chip combination so it only makes sense to combine that with cheesecake. I thought of doing a baked cheesecake with these flavors but I love these elegant individual servings and I also love the texture of a whipped up mousse. If you are looking for a dessert to make this weekend (or for any upcoming holiday or celebration) make these! They are irresistibly amazing to say the least!

Anyway it ended up not having enough flavor for me (even after simmering and reducing the strawberries and therefor concentrating the strawberry flavor) so I ended up having to add a strawberry sauce to the top of them. Why go the no bake route? Because you don't even have to turn on your oven during these hot summer months, and because it's nice to switch things up for a change from the heavy and dense cheesecake to something with more of a light, melt-in-your-mouth kind of texture.
