What is Porridge?

Porridge is a soft food with a creamy or mushy consistency that's typically served warm. It is made by boiling together any chopped or crushed grain or starchy plants with a liquid such as milk or water.

The most common versions (at least here in the U.S) are served for breakfast but different variations are served for other meals.

Porridge is ancient dish that has been around for thousands of years and has been a cheap and comforting dish that has fed many civilizations.

There are many variations, a few of the most well known types are made using rice, cornmeal, oats, and wheat.

I have tried several different grain blends for porridge and this was my favorite blend including the steel cut oats, farro and amaranth.

The Tastiest Green Smoothie!

The great thing about this healthy smoothie is that there's no spinach flavor. You wouldn't believe how the fruit hides the flavor of the spinach even though there's a hefty 2 1/2 packed cups of it.

Even my kids love this smoothie! My daughter says it tastes like pie. And I love that it's a breakfast or midday snack I feel great about feeding them. No artificial flavors or colors, and it's not a bunch of empty carbs (like some of those sugary cereals they like). Plus it keeps us full until lunch.

We call it the Grinch smoothie because even if a food doesn't look so appealing to kids if you give it a fun name it can make all the difference.

Sometimes it comes out with a prettier green than others (who knows it must be the batch of spinach and berries) but every time we love it just the same. I always look forward to breakfast when I know I've got everything stocked to make this! I've been hooked on it all summer.

It's quick and easy, perfectly filling and satisfying, and just perfectly delicious! Who knew healthy could taste so good?

These are one of my favorite all time favorite childhood treats. My mom and everyone else I know always made them. They're just one of those old fashioned classics!

They are perfect for parties because they make a full cookie sheet, and adults and children alike absolutely love them.

I mean, who doesn’t love the chocolate and peanut butter combo, and who doesn’t love cookie bars and frosting?

I made them yesterday and it’s one of those things where I kept going back and cutting off a thin slice, then another, then another and then I woke up for breakfast at it was the first thing I just had to have a taste of.

DIY Granola - Without Added Oil or Butter!

I've always loved granola and all the different varieties you can have but I prefer not to have all the added calories of the excess oil you usually find with it. After trying this recipe you'll see the oil isn't really even needed.

I've been using this recipe for 6 years! It used to have dried fruit in it as well (which you can definitely still add) but I just prefer it without.

It's a breeze to make and it keeps well for weeks (if it will last that long).

Honey Almond Granola

This flavorful granola is made with rolled oats, flax seed, almond and it's sweetened and flavored with honey, almond extract and vanilla extract.

This recipe is a breeze to make yet the end result is even better than what you find in a bag at the store! It's hearty, crunchy, sweet and just totally satisfying.

Here's the simple list of ingredients to make it:

  • Rolled oats

  • Preheat oven and line baking sheet.
  • In a bowl toss oats, almonds, flax, oil, sweeteners, extracts, egg white and salt.
  • Spread onto prepared baking sheet and bake, tossing halfway through.
  • Let cool and break into clumps.

Tips for This Recipe

  • Try it with other nuts or dried fruit.
  • Don't use quick oats. They're already partially cooked and the texture doesn't work well here.
  • If you'd like you can cut back on the sweeteners a little but it might not crisp or clump together as well, but at least it would be a little healthier.

What Can I Add This Granola To?

  • Add it to salads. I love a spinach salad with berries, raspberry vinaigrette, feta and granola.
  • Sprinkle it over pudding or ice cream for some nice contrast.
  • Make a parfait, layered with fresh fruit, yogurt, honey and granola.
  • Make it into a crust for a breakfast fruit tart.
  • Sprinkle it over a warm fruit filling (like apple pie filling) for a simple crisp.

Honey Almond Granola

Honey Almond Granola will quickly become a favorite DIY recipe! This is so easy to make,  it's deliciously sweet, perfectly crunchy and you'll love those bits of nuts! It's perfect paired with milk or serve with yogurt and fruit, it also makes a great on the go snack.

  • 3 cups (270g) rolled oats (don't use quick oats)
  • 1 cup (150g) almonds, chopped
  • 1/3 cup (36g) ground flax seeds
  • 1/4 cup (58g) coconut oil, melted and cooled slightly
  • 1/3 cup (110g) honey
  • 1/3 cup (77g) packed light-brown sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 large egg white
  • 1/4 tsp fine sea salt
  1. Preheat oven to 325 degrees (if your oven cooks hot be sure to decrease the temperature as needed or the granola will burn. I recommend using an oven thermometer when baking. I always have to reduce my oven by about 15 degrees to get the right temp). Line a rimmed 18 by 13-inch baking sheet with parchment paper, set aside.
  2. In large mixing bowl lightly toss together oats, almonds and ground flax seeds. In a medium mixing bowl whisk together coconut oil, honey, brown sugar, vanilla extract, almond extract, egg white and salt until very well blended. Pour honey mixture over oat mixture and toss well until evenly coated. Pour oat mixture onto prepared baking sheet and spread into an even layer.
  3. Bake in preheated oven 13 minutes, remove from oven and flip granola with a spatula and spread back into an even layer. Continue to bake until granola is just lightly golden brown, about 12 - 17 minutes longer (it won't be crisp until it cools, to check for doneness you can place a small piece in the freezer for about a minute or two and see if it becomes crisp. If it doesn't pop the granola back into the oven for a few minutes. After the granola has cooled for about a minute I like to press down on the granola with my hands while it's still warm, I think it helps it clump together more). Let it cool completely, break into clumps then store in an airtight container.
