Easy Orzo Pasta Salad

This is the perfect thing to make year-round. It's a nutritious, well rounded, veggie-packed pasta salad.

You can make as is or toss in some cooked chicken or shrimp (just make a little bit of extra dressing). And if you want to make it even healthier you can use whole wheat pasta in place of the standard semolina based orzo.

This is brimming with fresh Mediterranean flavor and it is so easy to throw together. It's mostly just a bit of chopping, cooking orzo pasta and whisking a quick dressing.

We love it for lunch but it's always so welcomed at dinner too, and it's delicious paired with salmon or grilled chicken. It may likely soon be one of your favorite recipes to make with orzo!

The Perfect Summer Pasta Salad

What would summer be without at least one cookout or picnic that includes a vibrant and perfectly enjoyable, cold pasta salad?

This will quickly become a new favorite because there is so much goodness and an abundance of fresh flavor. Each of the ingredients blend exceptionally well together, each one complimenting the other.

It has a harmonious blend of textures as well. There's a nice trio of crisp, soft, and chewy.

This makes a very hearty and satisfying side dish that pairs well with grilled chicken, beef or fish.

Just one thing to note - it does make a very large salad, or enough for a small crowd. The recipe will halve nicely for a family dinner.

Or just make the full recipe anyway and serve the leftovers the following day for lunch.

This veggie packed version is easy thanks to the shortcut of zesty bottled Italian salad dressing.

So all you have to do is boil the pasta, chop the veggies and toss everything together.

Easy Pasta Salad Recipe

This is a cold pasta salad, which means it's perfect for summer. I also love that it can be made up to a day in advance, so if you are planning a summer get together you can check this off the list a day ahead.

And let's not forget the main reason this is perfect for summer — all those colorful garden veggies (and some that are technically fruit). It's such a great way to use up the abundance of veggies in season from either your garden, the farmers market or the grocery store.

Even though it uses a bottle of dressing, I'd still consider this one of the best pasta salads. Maybe it's because it's one of those sides that was always there in the summer growing up but it will always be one of my favorites.

You can never have too many salad recipes right? Especially when they are this delicious and healthy. This salad is a breeze to make and it's coated with such a delicious Greek salad dressing. It just requires some simple chopping and quick mixing a voila, you've got a seriously tasty side dish!

How To Make Greek Salad

To make this simple salad all you need to do is chop up an assortment of fresh Mediterranean veggies and some olives, add a simple dressing and some feta and you'll have a delicious salad everyone will love in no time!

Here you can use Calamata olives or black olives - I prefer a blend of both but if you don't keep both on hand just go with what you like. Also, if you want to remove the harsh bite from the red onions, just rinse them under warm water (and drain) before adding to the salad.

And yes the avocado is optional - it's not so traditional but trust me it just makes the salad that much better. Just be sure not to use one that's very soft or it will just mash up when you toss the salad.

Greek Seven Layer Dip

Seven Layer Greek Dip is a fun Mediterranean spin on the classic version we're all used to! This dip begins with a layer of freshly made hummus then it's topped with a creamy, garlic-herb Greek yogurt layer then a layer of English cucumbers, grape tomatoes, black or kalamata olives, then finally it's finished with feta and red onions. Don't you just want to dive into all that goodness?

  • 1 (15.5 oz) can garbanzo beans, drained and 1/4 cup liquid from can reserved*
  • 2 1/2 Tbsp tahini
  • 2 Tbsp fresh lemon juice
  • 2 small garlic cloves (, minced)
  • 1/2 tsp cumin
  • 1/2 tsp salt (, or to taste)
  • 2 Tbsp olive oil
  • 1 1/3 cups thick plain Greek yogurt (, such as Fage)
  • 1 1/2 Tbsp finely chopped fresh parsley
  • 1 Tbsp minced fresh dill
  • 1 cup diced English cucumber
  • 1 cup diced grape tomatoes or Roma tomatoes ((drain off excess liquid after cutting))
  • 1/3 cup sliced black olives or kalamata olives
  • 1/2 cup crumbled feta cheese
  • 3 Tbsp chopped red onion (, rinsed and drained)
  1. Add drained garbanzo beans to a food processor along with tahini, lemon juice, 1 clove of garlic, cumin and 1/2 tsp salt. Pulse for about 1 minute then with food processor running slowly pour olive oil and 2 Tbsp of the liquid from the chick peas into the food processor. Hummus should be somewhat thick, but add more of the liquid as needed 1 Tbsp at a time. Spread hummus into an even layer in an 11 by 7-inch or 8 by 8-inch baking dish (at this point chill through if you have time).
  2. In a medium mixing bowl stir together Greek yogurt with parsley, dill and remaining garlic. Dollop mixture over hummus layer in dish and spread into an even layer. Top with cucumbers, tomatoes, olives, feta and onions. Serve with pita chips (serve immediately after sprinkling veggies over top for best results). Store in refrigerator.
  3. *I made a double batch of the hummus so I could save half for later. If you want to do this just double eveything from the garbanzo beans to the olive oil then only use half of it for the dip.

Such a Flavorful Grilled Salmon Recipe!

Before summer is officially over I decided I better get in a few more tasty meals featuring the best of the summer produce while it's still in season, and so here we are.

This salmon is unbelievably delicious and it's actually so easy to prepare! Yes it may require a bit of chopping and I definitely recommend chopping everything itty bitty - to give it more of a salsa fresca type feel rather than a salad, but the extra bit of chopping is so worth it in the end!

My husband, my mom and myself couldn't get over how good this was (especially for how easy it was to make it)! I also love how it all comes together so well, the salsa goes perfectly with the salmon as well as the orzo.

Try the Greek Salsa on Chicken or Beef Too!

This salsa would also be delicious on chicken or beef if that's what you've got on hand but do try it at least once with the salmon because it is oh so good!

I think I'll have to squeeze this one it at least one or two more times before it starts too cold for grilling outside.

I just love all the freshness in these meal, and I can never get enough of those zesty Greek flavors!Grilled Salmon in a wooden single serving bowl with Avocado Greek Salsa and Orzo

Grilled Chicken Chopped Salad with Italian Dressing https://www.cookingclassy.com/grilled-chicken-chopped-salad-italian-dressing/ https://www.cookingclassy.com/grilled-chicken-chopped-salad-italian-dressing/#comments Fri, 29 Apr 2016 02:34:24 +0000 https://www.cookingclassy.com/?p=24234 Since I've been eating so much cake lately (this Lemon Sheet Cake, this Coconut Sheet Cake and a soon to be shared decadent Chocolate Sheet Cake) I thought I'd better get some salad in my diet to help balance things out. Really, I actually love salads so I make them all the time. It's one of the easiest ways to pack veggies into your diet and make them taste good. Plus, I really do eat cake or some other type of dessert far more often than I should so I really do need a lot of salads in my life to help balance things out a little.

Grilled Chicken Chopped Salad with Italian Dressing | Cooking Classy

This Grilled Chicken Chopped Salad could fall under a Greek type salad or Italian salad, it tastes like either or. If you wanted it to be like a traditional Italian salad you could add in some salami or pepperoni but I wanted it to be a little bit healthier so I didn't add either of those. I love that this dressing is a slightly creamy vinaigrette thanks to the light mayo in it. The great thing here is that you'll likely have some left over dressing for a lunch salad the next day! If you want to add more flavor to your grilled chicken you can definitely add more seasonings to it, for something like this I generally just add onion powder and garlic powder, salt and pepper. That's optional though, the dressing already has plenty of flavor so everything else doesn't need much.

If you want to make the ingredient list shorter you can omit some of the ingredients and still have an amazing salad. I'd say the olives, croutons and red onions are optional, and of course the peppers, leave everything else and you'll still have a wonderfully filling and delicious salad!
