Ingredients call for lemon juice or vinegar; assembly calls for both in step 2. I just used lemon juice and they were wonderful . Thank you for making old things new again.

This one is more for simplicity because people don’t often keep buttermilk on hand. The buttermilk pancakes have a bit more flavor, these have the standard basic flavor.
As far as the egg white goes you could do that for extra fluffy pancakes. I do it with my waffle batter.

Sorry to hear that! I’ve made these many times and actually we just had them again this morning for breakfast and they shouldn’t be thin and crepe-like but rather have a medium thickness and a nice fluffiness to them. It sounds like the flour may not have been accurately measured (if you are using spoon and level method it would be 1 1/2 cups flour, the 1 1/3 cups should be measured as noted), batter was slightly over mixed, baking soda may have been forgotten, or batter wasn’t rested, or griddle wasn’t hot enough. Hopefully we can get to the bottom of what went wrong!

The batter was very thin and I did not stir mixture differently than I do other pancake batters. I followed the recipe exactly. They turned out more like crepes. The flavor was nice.
