Such a cozy favorite!

Creamy Chicken Noodle Soup

Aren't most things better when they have the addition of cream? This chicken noodle soup is no exception.

It's very similar to the traditional homestyle chicken noodle soup just richer and creamier. And it's perfectly soul warming and satisfying.

This soup is so over-the-top delicious that it's easily worthy of the dinner rotation.

You'll find it's also a versatile soup. You can switch up the pasta, try different vegetables, or use a rotisserie chicken if that's what you've got on hand.

We love it served with beautifully browned, artisanal style fresh bread for dipping and a seasonal side salad.

Texas Chili Con Carne https://www.cookingclassy.com/texas-chili-con-carne/ https://www.cookingclassy.com/texas-chili-con-carne/#comments Thu, 19 Oct 2023 22:00:10 +0000 https://www.cookingclassy.com/?p=68821 Texas style Chili Con Carne - Bite size pieces of chuck roast are browned then simmered in a homemade thick chili puree until flavors have well developed and beef is perfectly tender. From there you can top it with all your favorite toppings and pair it with tortilla chips or cornbread for the ultimate cozy meal!

Chili Con Carne

Chili con carne is a robust and rich chili made with beef roast that includes deeply flavored Mexican chilies and spices all simmered together in a stew-like dish. This is a Texas style chili and it's made of mostly beef and chili sauce without lots of added fillers.

It uses a generous amount of browned beef chuck chunks rather than ground hamburger and this really builds up the meaty flavor. Whole dried chilies are used in place of pre-ground store-bought chili powder, and those chilies are toasted in a skillet then soaked in liquid and pureed in a blender to build the base of this hearty chili.

The chili is simmered low and slow on the stovetop for well harmonized depth of flavor and to tenderize the beef.

It's an impressive made from scratch chili that may seem intimidating at first but once you try it you'll see it's easier to make than you'd think.

It's also a tasty change from the original style chili and you may find tasters to love it even more, especially meat lovers! Plus it could just win your next chili cook off!

It's the perfect autumn salad!

Our Favorite Apple Salad Recipe!

Who doesn't love a salad that includes fresh seasonal ingredients? Many of us are baking with those delicious seasonal fall apples (making apple crisp, apple pie or apple cobbler) but those juicy apples are also such great addition to savory recipes (like this autumn sheet pan chicken dinner) and side salads like this.

Apples are the crowing star of the show in this salad and they are highlighted beautifully by the other ingredients like the tangy feta and rich smoky bacon. Bacon makes everything better though right?

This salad is simple enough to be an addition to weeknight meal but it's also delicious enough to be served at a holiday gathering or a weekend party.

If you want to make it a main dish just add some chopped rotisserie chicken to it for more protein or consider tossing in a grain like farro, barley or even seedy tri color quinoa.

So much to love about this colorful, vibrant, sweet and savory salad!

Chicken Schnitzel https://www.cookingclassy.com/chicken-schnitzel/ https://www.cookingclassy.com/chicken-schnitzel/#comments Sat, 30 Sep 2023 18:12:03 +0000 https://www.cookingclassy.com/?p=68766 Pan fried Chicken Schnitzel - made with thinly flattened, tender chicken breasts, a light seasoning, a simple breading and cooked in a hot skillet to achieve a beautifully golden brown, super crisp finish.

From there you can serve it with simply fresh herbs and tart lemon wedges for spritzing, or your favorite dipping sauce (honey mustard, bbq sauce, ranch etc), chicken gravy or other creamy pan sauce.

What is Chicken Schnitzel?

Schnitzel is a German and Austrian dish made with meat that is pounded very thin then it's coated in a standard three layer breading including flour, eggs and some type of bread crumb (such as bread crumbs, matzo meal or in this case panko), after that it's fried in a bit of oil until browned and cooked through.

To me chicken schnitzel is like a grown up, fancier version of chicken nuggets with a similar taste and texture. Just simple but delicious, with an excellent texture.

It's a straightforward process to follow and easier to make than you'd think. And I'd say yes it is definitely worth the extra dishes it takes to bread the chicken.

It is a dinner item my family has requested be added to a regular rotation, and I have the feeling yours may agree with that too!

Wondering what to serve with chicken schnitzel?

I recommend serving with:

Apple Chicken Salad https://www.cookingclassy.com/apple-pecan-rosemary-greek-yogurt-chicken-salad/ https://www.cookingclassy.com/apple-pecan-rosemary-greek-yogurt-chicken-salad/#comments Wed, 20 Sep 2023 15:47:09 +0000 https://www.cookingclassy.com/?p=20728 Refreshing Chicken Salad with Apples - This fall inspired recipe is loaded with crisp sweet apples, crunchy pecans, green onions, lightly tart cranberries and plenty of tender chicken. And it's all coated in a Greek yogurt based rich and creamy rosemary dressing.

Autumn Apple Pecan Chicken Salad

A crisp, apple studded, protein rich chicken salad that's perfect for a hearty autumn lunch or even a simple weeknight dinner that won't weigh you down.

It's made healthier with a combination of Greek yogurt and a little mayo, and it pairs beautifully with a hearty whole grain bread. Or you can serve it lower carb over lettuce leaves for another nutritious option.

This version is made with rotisserie chicken but you can use leftover cooked chicken breasts as well. I just recommend that you avoid canned chicken for a better chicken salad.

It's simple to make and worthy of your recipe collection!

Try serving it with baked sweet potato fries or sweet potato chips for a colorful fall pairing.

Chicken Noodle Soup with Corn and Bacon!

Can you add corn to chicken noodle soup? Absolutely and it makes such a delicious soup!

That's just what you get in this soup recipe. It's like chicken noodle soup upgraded with fresh juicy corn, plus we dot it in some bacon and blend in some cream for good measure.

It's also similar to a chowder, and it's adaptable to what you have on hand (as usual see ideas below). For instance you can replace bacon with ham or make this Pennsylvania Dutch style with homemade mini dumplings called rivels in place of noodles (making the soup completely from scratch!).

Pair it with a slice of buttered homemade bread and a simple garden fresh salad with a homemade herby ranch for the most comforting homestyle dinner!

Hamburgers https://www.cookingclassy.com/hamburgers/ https://www.cookingclassy.com/hamburgers/#respond Fri, 01 Sep 2023 03:12:20 +0000 https://www.cookingclassy.com/?p=68600 A perfect, juicy all American Hamburger! Here I'll share 3 simple ways to cook burgers (including stovetop, grill and even oven), plus tips on how to build the best burger. This includes a simple homemade bun, a variety of sauces and all the best toppings!

An Easy Classic Burger Recipe

Burgers have long been a staple food in our family. So I guess you can say we are a typical American family.

Growing up we had them cooked to that hockey puck doneness, overly well, but as a kid I didn't care it was a burger. One thing my mom never got wrong though was that she never used the pre-formed patties. That's burger mistake number one in my mind.

Shaping your own burgers from fresh ground beef will give you a fair superior result.

Helpful Tips

After 20 years of experience making hamburgers I've learned several other things along the way to create the perfect burger:

  • Use a high quality bun for the base as this makes up a huge portion of the completed burger. Homemade or bakery fresh is best.
  • Go for a good fat ratio within the beef for tenderness (personally I prefer 85%).
  • Adequately season the meat with salt, this is a big one people often miss.
  • Careful not to overwork the beef as you shape the patties so it's not tough.
  • Use a food thermometer to cook to the right temp so it's not undercooked and dangerously rare, or over-cooked and dry and rubbery.
  • Preheat pan/grill and maintain that proper temp. Otherwise you'll end up with a pale steamed-like patty or overly charred burger.
  • Cook at a fairly high temp without disturbing as it cooks, this helps create a beautifully brown crust. The only way I could achieve this in the oven was to start that pan out super hot and not turn the burger until the end, for one nicely browned side at least.
  • Slice toppings fairly thin. For texture and this allows the flavor of the beef shine if we don't go overboard on toppings.
  • Toast the buns so they don't get soggy and they hold up better.
  • If grilling burgers don't leave them unattended. Grills can have dangerous flare ups if you don't keep an eye on things. You should also be cleaning the fat from the grill regularly.

Over the years I've also tried different things like seasoning the beef to build in other flavors, creating various sizes of burgers, and trying various toppings.

I've settled on simple, and freshest is best but you are always welcome to change things up and go more bold (unique toppings, hot sauce/ peppers, blue cheese, etc).

And of course if you are a cheeseburger fan don't forget to add the cheese after turning the burger (during cooking) for perfectly melty cheesy goodness.

If you are wondering what my personal favorite method of cooking is here it's easily the cast iron stovetop method. But the others are nice for convenience as well and I use all three.Topping ideas for hamburgers shown on a baking sheet with hamburger buns surrounding them.

Cucumber Sandwiches https://www.cookingclassy.com/cucumber-sandwiches/ https://www.cookingclassy.com/cucumber-sandwiches/#comments Wed, 19 Jul 2023 04:11:22 +0000 https://www.cookingclassy.com/?p=67945 Classic Cucumber Sandwiches! Light, refreshing, and unbelievably easy to make, they’re a staple finger food for afternoon tea, baby showers, bridal showers, picnics, and every occasion in between!

Where Did Cucumber Sandwiches Originate?

Cucumber sandwiches are often thought of as an English tradition. So, you might be surprised to learn that they were originally created in India. From there, they spread to China, the Middle East, and Europe.

It is said that the sandwiches were created by British colonists in India who were trying to find foods that would fill their bellies and relieve them from the intense heat. The sandwiches then made their way back to England and became a staple component of Victorian-era high teas.

Today, they remain a popular recipe and are enjoyed all over the world. Quick, easy, and delicious, it’s not hard to see why they have been enjoyed for thousands of years. I’ll show you how to make them in minutes for the perfect snack, appetizer, or light lunch!

Easy Grilled Pizza Recipe

I've used this method to make pizzas regularly each and every summer. It's a fun family recipe to make together, and also great for serving to friends at parties and gatherings. Everyone loves to customize and top their own to just how they like.

You'll love this versatile recipe because you can use store-bought dough and sauce, or when time allows homemade of both is an excellent option. Just keep in mind with the shortcuts you can easily have these ready in under 30 minutes especially with friends or family help.

They are perfectly adaptable too. You can use other sauces, cheeses, and final toppings.

The key is just to stick to the simple process. That is to grill the crust on one side first, remove from the grill, flip it to that grill mark side, add your toppings, then grilling to finish after that. This way you end with a non-soggy crust that's not overly charred, and so much flavor throughout!
