I could not get the cream cheese to melt in the soup. It was a chunky mess. Have to be critical of this recipe because it did not turn out. Disappointed.

I use coffee mate in place of heavy cream. Less calories and just as good. Thicken with corn starch if needed. Might want to try this. I use it in scalloped potatoes also. (father was dairy sensitive)

Yes you can make it in a crockpot, there are instructions just down the page a ways. It should also be fine to cook and keep warm in a crockpot for an hour or so.

I would try 8 oz canned coconut cream. Then taste to see if you want an additional 1 Tbsp lime for more tang. I’m happy to hear you love it :)
