I would make the recipe through the end without adding potatoes, then freeze and just serve with baked potatoes. :) Congrats on the pregnancy!

Hi Jaclyn,

I am a frequent visitor of your site and always appreciate your delicious recipes! I am pregnant and looking for meals to pre-make and freeze that can be easily cooked once baby joins us (crockpot dump meals, etc). Do you have any thoughts on how I could do that with this recipe? Potentially complete steps 1-4 and freeze until ready to make, but wasn’t sure if that would affect cooking time, or if I should thaw the frozen parts before cooking. I know that isn’t how the recipe is intended but anything I can do to prep is helpful, thanks for your input!

It is possible that the texture of roast could get a bit tough or mushy if overcooked. I’d just quickly check at the time listed (pierce with a fork) to see if it needs a bit longer.

Sorry to hear this. If it tastes boiled it may be that your slow cooker cooks a bit high. As far as the potatoes go you can add them in earlier or cut into smaller portions.

Potatoes are a little crunchy though carrots seem to get done. All in all oven or stovetop gives better results because it is braised not boiled.
